Kashmir Valley, Jammu & Kashmir

Grown at high altitude where cool temperatures allow colour pigments to develop fully. Vibrant red with near-zero pungency. The defining ingredient in tandoori and Rogan Josh, and a clean-label alternative to synthetic red colourants.
